For 4 people
1kg / 2lb 4 oz of frozen broccoli
125g / 4 ½ oz of feta cheese
4 eggs
30g / 1 oz of powdered Parmesan cheese
250 ml / 1 cup of semi-skimmed milk
Fresh cilantro (coriander)
Salt, pepperPlace the broccoli in a saucepan with heated water. Do not completely cover with water.
Leave to cook for about 5 minutes.
To check the broccoli is cooked, spike with a fork – it must fall off the fork on its own.
Pre-heat your oven to gas mark 7 / 210°C / 410°F.
Place the cooked broccoli in a blender with the feta cheese, the eggs, the milk, the cilantro, salt and pepper.
Blend the ingredients and pour in a baking dish. Sprinkle with Parmesan cheese.
Bake for 35 minutes. To check when it is done, prick the flan with a knife. No liquid should appear when it is cooked.
If that is not the case, leave to cook for longer.Enjoy your meal!
